LEMON CHICKEN


* 10 strips boneless chicken fillet/breast (dipotong 1")
* Bahan Marinade:
* 3 sudu besar kicap cair
* 1 sudu kecil garam
* Bahan Batter:
* 1 biji telur (saiz besar)
* 1/4 cup tepung jagung
* 1 sudu kecil lada putih
* Bahan Sos:
* 1/3 cup gula
* 1 cup stok ayam (pakai kiub Knorr je) anggaran 1/2 kiub bercampur air
* 2 sudu besar tepung jagung
* 1/2 biji lemon (diambil jusnya sahaja)
* 1/2 sudu kecil garam
* 2 sudu besar minyak masak

CUPCAKES IN A CUP


Cupcakes in a Cup
Makes 8 large cups

Ingredients
1 1/2 stick unsalted butter, softened+1 tablespoon for greasing the cups
1 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
1 1/2 cup plain flour
1/2 teaspoon baking powder
1/2 cup milk
frosting
coconut shavings

Directions
Preheat oven to 350F.
Grease 8 large coffee cups.
Beat butter and sugar with an electric mixer on medium speed until pale and fluffy.
Add eggs, one at a time.
Mix in vanilla, flour, baking powder and milk.
Mix until smooth.
Spoon batters into cupa, filling about two-thirds full.
Bake until a cake tester comes out clean, about 12 minutes.
Cool, frost and sprinkle with coconut shavings.

How To Make Beignets


"A traditional New Orleans-style recipe for their famous beignets! Grab a cafe au lait and you're set!"

Ingredients:

2 1/4 teaspoons active dry yeast
1 1/2 cups warm water (110 degrees F
/45 degrees C)
1/2 cup white sugar
1 teaspoon salt
2 eggs
1 cup evaporated milk
7 cups all-purpose flour
1/4 cup shortening
1 quart vegetable oil for frying
1/4 cup confectioners' sugar

DIRECTION:

1. In a large bowl, dissolve yeast in warm water. Add sugar, salt, eggs, evaporated milk, and blend well. Mix in 4 cups of the flour and beat until smooth. Add the shortening, and then the remaining 3 cups of flour. Cover and chill for up to 24 hours.
2. Roll out dough 1/8 inch thick. Cut into 2 1/2 inch squares. Fry in 360 degree F (180 degrees C) hot oil. If beignets do not pop up, oil is not hot enough. Drain onto paper towels.
3. Shake confectioners' sugar on hot beignets. Serve warm.

Carrot cake with cinnamon frosting




  • zest and juice 1 orange
  • 50g sultanas
  • 150ml sunflower oil , plus extra for greasing
  • 2 eggs
  • 140g soft light brown sugar
  • 85g wholemeal self-raising flour
  • 85g self-raising flour
  • 2 tsp each ground cinnamon and ground mixed spice
  • 1 tsp bicarbonate of soda
  • 140g carrots , coarsely grated
  • 50g walnuts , chopped, plus a few halves to decorate

FOR THE ICING

  • 200g soft cheese
  • 50g butter , softened
  • 85g icing sugar , sifted
  • pinch ground cinnamon

What is... AGAR AGAR


This is made from seaweed and is ideal for vegetarians who prefer not to use gelatin, which is made using animal bones and tissue. You can buy agar agar as flakes or as a powder. Although more expensive, flakes are tge more natural product as they undergo less processing.

Agar agar has more setting power than gelatine, and sets well at room temperature whereas gelatin must be chilled. Like gelatin e , though, avoid using agar agar with fresh fruits such as kiwi, papaya, pineapple, mango and peaches as their enzymes prevent it from setting.

Tuna and tomato pasta


-4 cloves of garlic, diced
-olive oil
-2 cans of chopped tomatoes
-handful of fresh chopped flat-leaf parsley
-1 can tuna (in oil)
-handful of fresh basil (chopped)
-salt & pepper
-pasta (penne or farfalle, etc.)

Sauté the garlic in the olive oil. Add the canned tomatoes and the chopped parsley, then simmer on the stove for 15-20 minutes. Season to taste. (While the tomatoes are simmering, boil the water for the pasta and cook the pasta for specified time.)

At the very last minute, after the pasta is cooked and drained, add the tuna and chopped basil to the simmering tomatoes. Toss everything into a large bowl and serve.

Carlo's Lite Banana Bread

INGREDIENTS:

2 cups flour (I only use whole-wheat flour but my wife says it tastes so "healthy"! You can mix with white flour or use white flour alone, depending on what you prefer.)

1 and 1/2 teaspoon baking powder

1 and 1/2 teaspoon baking soda

1 cup apple sauce (I make my own in the restaurant; but when at home, I just use the ones bought in the supermarket.)

3 pieces very ripe bananas (The more ripe the bananas, the sweeter your bread will be.)

2 eggs

2 tablespoons low-fat yoghurt

4 tablespoons honey

1 teaspoon vanilla extract


PROCEDURE:

1. Pre-heat your oven to 175°C (350°F). If you have a convection oven, preheat to 150°C (300°F) only.

2. Mix flour, baking powder and baking soda in a bowl.

3. In another bowl, mash bananas with a fork. I like mine chunky, so I don't mash too much. Mix together applesauce, bananas, eggs, honey, vanilla extract and yoghurt.

4. Incorporate the two bowls together (dry ingredients with the wet ingredients). Mix just enough to bring the batter together. Do not overmix.

5. Place in a silicone-paper lined loaf tin and bake in the middle of your oven for 45-50 minutes, or until a knife comes out of the middle of the bread completely clean.

6. Remove the tin from the oven and allow to cool slightly before removing the bread from the tin and placing on a cooling rack to cool fully.

7. ENJOY!
